What each ingredient does

Green tomatoes
Provide the bulk of the pickle and firm texture once salted and drained.
Coarse sea salt
Draws moisture out of the tomatoes, firming them and reducing excess liquid.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp flavour.
Onions
Add sweetness and savoury body that mellows the sharpness of the vinegar.
White mustard seed
Adds a mild, pungent bite and characteristic pickle flavour.
Black mustard seed
Adds a sharper, more pungent heat that deepens the pickle's flavour.

The step that matters

Draining the salted tomatoes. Salt draws out liquid over the 2-hour rest. Discarding that liquid before adding vinegar keeps the pickle firm and stops it from becoming watery and diluted.

Swap the mace

How well each one fits the dish's main ingredients (tomato, vinegar, onion, pepper, mustard, clove, ginger):
