What each ingredient does

Cucumbers
Make up the bulk of the pickle and give it its crisp, fresh body.
Onions
Add sweetness and savory depth as they soften during the long boil.
Green tomatoes
Add tartness and body to the pickle mixture.
Brown sugar
Adds sweetness that balances the sharp vinegar and salt.
Vinegar
Provides the acidity that preserves the vegetables and gives the pickle its tang.

The step that matters

Draining after the salt soak. Salt draws water out of the vegetables overnight. Draining well removes that liquid so the pickle stays firm and the vinegar brine is not diluted.
