Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold chicken
Forms the bulk of the croquette and gives it its main body and flavour.
Suet
Adds fat that keeps the minced filling moist and tender while cooking.
Egg yolk
Moistens the paste and, as a coating, helps bread crumbs adhere and brown.
Bread crumbs
Form a crisp, golden outer crust when fried in lard.

The step that matters

Pound the mixture to a paste while adding egg yolk gradually. Adding the yolk slowly lets the minced chicken and suet absorb moisture evenly, so the paste binds without becoming wet or loose. This keeps the shaped croquettes firm enough to hold their pear shape and coating during frying.

Swap the nutmeg

How well each one fits the dish's main ingredients (chicken, parsley, marjoram, lemon, pepper, egg, flour):

  1. Thymefits better
