What each ingredient does

Chickens
Provide the meat that is pressed into a firm, sliceable loaf.
Boiling liquid
Adds moisture and savory flavor so the pressed meat stays juicy and binds together.

The step that matters

Adding the boiling liquid and pressing the weight. The warm liquid moistens the meat and, as it cools, gelatin from the chicken helps the layers set together. Too little liquid leaves the slices dry and crumbly.
