Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dressing

  1. Wash the turkey.

  2. Dry the turkey.

  3. Soak the dry bread in water. Press out the water from the bread.

  4. Mix the bread with salt, pepper, thyme, and butter.

Stuff and roast

  1. Stuff the turkey with the dressing. Sew up the turkey snugly.

  2. Place the turkey in a roasting pan with a little water.

  3. Roast slowly at 300°F (150°C) for about three hours.

  4. When the turkey begins to brown, rub the skin with a little butter to prevent blistering.

Make the gravy

  1. Boil the giblets in water. Chop the boiled giblets finely.

  2. Add the chopped giblets to the gravy.

What each ingredient does

Turkey
Forms the main body of the dish; its skin browns and its meat cooks through during slow roasting.
Dry bread
Soaked and pressed, it forms a moist dressing that absorbs juices from the bird as it cooks.
Butter
Adds fat and richness, and basting the skin encourages even browning and helps prevent blistering.
Giblets
Chopped and added to the gravy, they contribute savory flavor to the sauce.

The step that matters

Roast slowly at 300°F (150°C) for about three hours. A low, steady oven heat cooks the large bird through gently, so the meat stays tender while the skin browns. Too high a heat can dry the outside before the thick inner parts are cooked.

Swap the thyme

How well each one fits the dish's main ingredients (turkey, bread, pepper, butter):

  1. Sagefits about as well
  2. Thymethe original
  3. Parsleyfits about as well
  4. Marjoramfits less well

Fit is the average pairing score against turkey, bread, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
