Boned Turkey

Ingredients

Directions

Prepare the turkey

  1. With a sharp knife, slit the skin down the back of the turkey.

  2. Separate the flesh from the bones using the knife until you reach the wings and legs. Unjoin the wings and legs from the body, cutting through to the bone.

  3. Turn back the flesh and remove the bones.

Stuff and shape

  1. Stuff the turkey with a mixture of cold lamb or veal, chopped pork, salt, pepper, sage or savory, and lemon juice.

  2. Sew the turkey into shape, tucking the ends of the wings under and pressing them close to the back. Tie the turkey firmly to ensure a plump and smooth surface.

  3. Lard the top with two or three rows of fat.

Bake and serve

  1. Bake until thoroughly done, basting often with salt, water, and a little butter.

  2. Carve into slices and serve with jelly, cranberries, or tomato sauce.

What each ingredient does

Turkey
Forms the main body of the dish, cooked through as the central mass.
Cold lamb or veal
Provides the bulk and savory meat flavor of the stuffing.
Chopped pork
Adds fat and moisture to the stuffing so it stays tender during baking.
Butter
Adds richness and helps the skin brown while basting.
Lemon juice
Adds acidity that brightens the rich meats in the stuffing.

The step that matters

Bake until thoroughly done. A large stuffed bird cooks unevenly, and the stuffing sits in the cavity where heat reaches slowly. Cooking until fully done, with frequent basting, keeps the meat moist and prevents dry outer flesh while the center finishes.
