What each ingredient does

Gooseberries
Make up the bulk of the preserve and provide the fruit flavour and texture.
Finely powdered loaf sugar
Sweetens the fruit and, in quantity, draws water out of it to help preserve it.
Red currant juice
Adds liquid to dissolve the sugar, plus acidity and natural pectin to help the preserve set.

The step that matters

Dissolving the sugar in the juice. Sugar must fully dissolve into the juice before boiling. Undissolved grains can recrystallise, leaving a grainy texture and uneven sweetness in the finished preserve.
