Scalloped Clams

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter a deep tin dish.

Layer and assemble

  1. Layer half of the grated bread or cracker crumbs in the dish.

  2. Sprinkle with pepper and bits of butter.

  3. Add a layer of chopped clams, seasoned with butter and pepper.

  4. Repeat the layers of crumbs and clams until the dish is full.

  5. Finish with a layer of crumbs topped with plenty of butter.

  6. Pour 1 cup of rich milk over the top and cover with a plate.

Bake and brown

  1. Bake for 45 minutes.

  2. Remove the plate to brown the top before serving.

What each ingredient does

Clams
Provide the main seafood flavor and substance of the dish.
Bread or cracker crumbs
Form the layers that soak up milk and butter and hold the dish together.
Rich milk
Moistens the crumbs and clams during baking, giving a creamy, saucy texture.
Butter
Adds richness and flavor, and helps the top brown as it bakes.

The step that matters

Removing the plate to brown the top. The cover traps steam so the dish bakes moist; the top only browns when the cover comes off, so uncovering it late in baking gives color without drying the layers too much.
