Escallopped Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Butter a scallop shell or dish and sprinkle with sweet bread crumbs.

  2. Place a layer of oysters on the crumbs and season with pepper and coarse sea salt.

  3. Add another layer of oysters, more bread crumbs, butter, and season again.

  4. Add a third layer of oysters, a little butter, a dash of cayenne pepper, and the oyster liquor.

  5. Bake in a 400°F (200°C) oven for 20 minutes.

  6. Use a hot shovel to brown the top until it resembles the color of good toast.
