What each ingredient does

Beans
Form the body of the soup once pressed through a colander, giving it thickness.
Baking soda
Softens the bean skins so the beans cook through more quickly.
Pork
Adds savory flavor to the cooking water as the beans simmer.
Butter
Adds richness and a smooth, silky mouthfeel to the soup.
