What each ingredient does

Mutton
Provides the meat and rich flavour that forms the body of the broth.
Barley
Releases starch as it simmers, thickening the broth and giving it body.
Flour
Cooked with butter into a roux, it thickens the soup smoothly.
Butter
Forms a roux with flour and adds richness to the thickened broth.

The step that matters

Cooking the roux until smooth. Flour must be cooked with butter before it goes into the liquid; otherwise it clumps and tastes raw. Stirring it in smoothly lets it thicken the soup evenly.
