What each ingredient does

Ox tails
Long simmering breaks down their connective tissue, giving the broth body and rich flavor.
Onions
Cooking softens them and adds sweetness and savory aroma to the broth.
Carrots
They release natural sweetness and color into the broth as they simmer.
Flour
Its starch thickens the broth slightly during the long simmer.
Arrowroot
Added near the end, this starch thickens the soup to a glossy, smooth consistency.

The step that matters

Adding the arrowroot mixture to the soup. Arrowroot thickens quickly when heated, but prolonged boiling can thin it out again. Keep the final boil short and watch the soup's consistency.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, carrot, turnip, flour, arrowroot):
