Why it works: Flour and sugar are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Raw Potato Yeast

Ingredients

Directions

Make the potato mixture

  1. Mix flour, sugar, and salt with a little water to form a paste.

  2. Pare and grate the potatoes quickly into the paste.

  3. Pour boiling water slowly over the mixture while stirring well.

  4. If the mixture doesn't thicken, boil it in a kettle for 1 minute, stirring to prevent sticking.

  5. Strain the mixture into a bowl and let it cool.

Ferment and store

  1. When lukewarm, add the yeast and cover with a napkin.

  2. Keep in a warm place for several hours until fermentation stops.

  3. Stir occasionally during fermentation, then transfer to a clean jar.

  4. Cover and store in the cellar or refrigerator, avoiding direct contact with ice.

  5. Reserve some yeast for future baking and shake before use.

What each ingredient does

Potatoes
Provide starch and moisture that feed the fermentation and give the liquid body.
Yeast
Starts the fermentation that makes the liquid lively and able to raise dough.
Flour
Forms the initial paste that thickens and feeds the mixture for fermentation.
Sugar
Gives the yeast an easily used food source to fuel fermentation.

The step that matters

Adding the boiling water. Pouring boiling water slowly while stirring well cooks the starch in the flour and potato so it thickens smoothly without lumps. Poured in quickly or unstirred, it can clump and leave the mixture uneven before fermentation.

Swap the potato

How well each one fits the dish's main ingredients (flour, sugar):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
