Roast Turkey

Ingredients

Directions

  1. Select a large turkey, preferably a female for an 8 lb bird.

  2. Remove pin feathers and singe the turkey carefully.

  3. Remove giblets and excess fat, then wash the turkey inside and out.

  4. In a skillet, cover giblets with water and cook until tender, then chop finely.

  5. Add butter, chopped onion, salt, pepper, and giblets to the skillet and heat the mixture.

  6. Chop dry bread and mix it with the seasoned liquid and a little sage, adjusting moisture with hot water if needed.

  7. Stuff the turkey with the mixture without packing it tightly, and stuff the neck end as well.

  8. Tie the skin at the neck and sew the turkey closed.

  9. Cover each leg with three slices of bacon and secure with skewers or toothpicks.

  10. Wrap each leg with a soft cloth and sew it on, then tie the legs to the back of the turkey.
