Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Finely chop the onion.

Mix and shape

  1. In a large bowl, combine the beef, pork, chopped onion, soaked bread, salt, pepper, and eggs. Mix well until all ingredients are combined.

  2. Shape the mixture into a loaf and place it in a bread pan.

Bake

  1. Set the bread pan in a larger dish filled with hot water.

  2. Bake for one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main body and rich meaty flavor of the loaf.
Pork
Adds fat, which keeps the loaf moist and tender as it cooks.
Eggs
Bind the mixture so the loaf holds its shape when sliced.
Bread soaked in milk
Holds moisture and keeps the meat loaf tender rather than dense.

The step that matters

Mixing the meat with the other ingredients. Mixing just until combined keeps the texture tender. Overworking ground meat develops its proteins and makes the loaf tough and dense.

Swap the onion

How well each one fits the dish's main ingredients (beef, pork, bread, milk, pepper, egg):
