What each ingredient does

Chopped beef
Forms the main body of the loaf and provides savory flavor.
Eggs
Bind the mixture together so the loaf holds its shape.
Bread crumbs
Absorb liquid and help keep the loaf tender and moist.
Milk
Adds moisture, keeping the meat from drying out as it cooks.
Butter
Adds fat for browning the outside of the loaf and rich flavor.

The step that matters

Browning the loaf on all sides. Browning creates flavorful compounds through the Maillard reaction. Turning the loaf so every side colors gives better flavor and a more even surface before the long simmer.
