Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Preheat the oven to 400°F (200°C).

  2. Pare the potatoes and cut off about 1 inch from one end.

  3. Hollow out the center of each potato using a small knife or apple corer.

  4. Fill the hollowed potatoes with the seasoned meat or sausage.

Make the brown gravy

  1. For the brown gravy, fry the chopped onion in butter until yellow.

  2. Stir in the dry flour, then gradually add the boiling water, seasoning with salt and pepper.

  3. Beat until smooth, cook for 5 minutes, then strain through a wire strainer.

Bake and serve

  1. Place the potatoes in a baking pan and bake until done.

  2. When serving, add a spoonful of stock gravy to each potato and garnish with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the hollow shell that holds the filling and bakes into a soft, starchy base.
Butter
Fat that softens and cooks the onion and carries flavor into the gravy.
Dry flour
Thickens the boiling water into a smooth gravy as its starch swells when heated.
Chopped onion
Adds aromatic sweetness and savory depth to the brown gravy as it cooks.

The step that matters

Stirring the flour into the butter and onion, then adding the boiling water. Flour must be cooked briefly in the fat and whisked smooth before liquid goes in; otherwise it clumps and the gravy stays lumpy and raw-tasting. Adding the boiling water gradually keeps the starch dispersing evenly as it thickens.

Swap the onion

How well each one fits the dish's main ingredients (potato, beef, parsley, butter, flour, pepper):

  1. Chivefits better
  2. Carrotfits better
  3. Shallotfits about as well
  4. Onionthe original

Fit is the average pairing score against potato, beef, parsley, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
