Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter in a bowl.

  2. Gradually beat in the sugar until well combined.

  3. Add the beaten egg and mix until light.

  4. Stir in the milk.

  5. Sift the flour with the baking powder and salt, then add to the mixture.

  6. Mix until well combined.

  7. Fold in the halved cranberries.

Bake

  1. Pour the batter into well-buttered muffin pans.

  2. Bake for 25 minutes at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, giving the muffins a tender crumb.
Egg
Adds structure and binds the batter as it sets in the oven.
All-purpose flour
Provides the main structure that sets as the muffins bake.
Baking powder
Releases gas that makes the muffins rise in the oven.
Sugar
Sweetens the batter and helps the muffins brown.
Cranberries
Add tart flavour and moisture to the batter.

The step that matters

Folding in the cranberries. Overmixing once the flour is in develops gluten, which can make muffins tough. Fold the halved cranberries in gently and only until they are evenly distributed.
