Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Baking soda
Raises the surface pH of the skin, which helps it brown during roasting.
Butter or lard
Adds fat that helps the skin brown and gives a richer flavour.
Raw eggs
Bind the dressing so it holds together when stuffed into the chicken.

The step that matters

Cook until it begins to tenderize. Covering the pan with water traps steam and gently softens the connective tissue. Cooking too hard or too long dries out the meat, so the bird needs steady, moist heat before it is basted to brown.

Swap the celery

How well each one fits the dish's main ingredients (chicken, butter, onion, egg, bread, pepper):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Celerythe original

Fit is the average pairing score against chicken, butter, onion, egg, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
