Stuffed Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Select enough large, smooth tomatoes to fill a baking dish.

  3. Cut a piece from the top of each tomato and scoop out the pulp without breaking the skin.

  4. In a bowl, mix the tomato pulp with chopped beef or mutton, bread crumbs, salt, pepper, and onion.

  5. Add a little sugar and a small piece of butter to the hollowed tomato skins.

  6. Fill the skins with the dressing, replace the tops, and bake until done.
