What each ingredient does

Bell peppers
Their flesh becomes tender and pliable after soaking and brining, so they can hold the filling.
Salt
Coarse salt draws water out of the peppers during brining, firming them and reducing bitterness.
Cabbage
Finely chopped cabbage adds bulk and a crisp, mild texture to the filling.
Onions
Chopped onions add savory depth and aroma to the stuffing.
Mustard seed
Mustard seed adds a sharp, pungent flavour that carries through the pickling liquid.
Vinegar
Vinegar provides acidity that preserves the peppers and gives the pickle its tang.

The step that matters

Repeated boiling salt water brine. Pouring boiling brine over the peppers and repeating it softens them and draws out moisture. If the process is rushed or the timing is skipped, the peppers stay tough and the pickle can taste harsh or spoil more easily.

Swap the mace

How well each one fits the dish's main ingredients (pepper, cabbage, onion, mustard, allspice, vinegar):

  1. Tarragonfits better
  2. Thymefits better
  3. Dillfits better
  4. Macethe original

Fit is the average pairing score against pepper, cabbage, onion, mustard, allspice, vinegar. Candidates are from the same food group and used in at least 100 recipes.
