What each ingredient does

Ripe tomatoes
Provide the main body, pulp and flavour of the ketchup.
Vinegar
Adds acidity that sharpens flavour and helps preserve the finished ketchup.
Ground mustard
Adds pungent flavour and aroma that balances the sweetness of the tomatoes.
Ground black pepper
Contributes sharp, warm heat and aroma to the seasoning blend.

The step that matters

Boil the mixture slowly for 2 to 3 hours. Long, gentle simmering evaporates water and concentrates the tomato solids, giving the ketchup its thick body and deeper flavour. Boiling too hard can scorch the bottom and burn the sugars and solids.

Swap the tomato

How well each one fits the dish's main ingredients (ginger, pepper, allspice, clove, mustard, vinegar):

  1. Horseradishfits better
  2. Shallotfits better
  3. Radishfits better
  4. Tomatothe original

Fit is the average pairing score against ginger, pepper, allspice, clove, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
