Why it works: Potato and rice match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 851 recipes. Both carry 2-acetyl-1-pyrroline, which smells popcorn, roasted. The science ↓

Kecooking Beef

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Trim the roast beef into shape and cover it closely.

  2. Heat the gravy and place the roast in it.

  3. Put the covered roast in a 400°F (200°C) oven for 10 minutes or less, depending on size.

  4. Alternatively, slice the beef and heat in hot gravy until warmed through.

  5. Mix chopped beef with potatoes, bread crumbs, or rice, adding salt, pepper, and enough water or soup to moisten.

  6. In a skillet, heat butter or beef fat until hot, then add the mixture.

  7. Cover and steam until heated, then uncover to let it dry out and form a brown crust.

  8. For cakes, form the mixture into small cakes, dust with flour, and fry in beef dripping until browned.
