Ingredients

Directions

  1. Cut the ray-fish into moderate-sized pieces.

  2. In a saucepan, combine the fish, onion, parsley roots, cloves, peppercorns, salt, and vinegar.

  3. Bring to a boil, then reduce heat and simmer for 30 minutes without boiling.

  4. Remove the skin from both sides of the fish and return it to the saucepan to keep warm.

  5. In a frying pan, melt 4 ounces of butter until it turns black.

  6. Fry a dozen sprigs of parsley in the butter for a moment, then remove them.

  7. Serve the fish with the white sauce and add capers on top.
