What each ingredient does

Cabbage
Forms the bulk of the dish and provides its main texture and mild sweetness when cooked.
Butter
Adds fat and richness, carrying flavor and helping the cabbage cook gently in the saucepan.

The step that matters

Press out all moisture after the cold water rinse. Cabbage holds a lot of water. If it stays wet, it steams and dilutes the butter instead of sautéing, so it turns soggy rather than tender and lightly golden.

Swap the cabbage

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Cabbagethe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
