Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Combine currants, raisins, citron, and the rest of your paste with yeast.

  2. Fill a buttered mold one-third full with the mixture.

  3. Bake in a 350°F (175°C) oven for about 45 minutes.

  4. Check doneness with a knife; it should come out dry.

  5. Turn out of the mold, pour rum over it, sprinkle with sugar, and serve.
