  1. Dissolve butter in a pan over gentle heat.

  2. Add mushrooms, sprinkle with salt and cayenne, and simmer for 8-10 minutes.

  3. Transfer mushrooms and butter to a plate and let cool.

  4. Stuff the cooled mushrooms into the bodies of the partridges and sew them up.

  5. Truss the partridges securely and roast them head down on a vertical jack or tie them to a spit.

  6. Roast for the usual time and serve with brown mushroom sauce or gravy and bread sauce.
