Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Directions

Prepare the oysters

  1. Boil the oysters in their own liquor, stirring constantly for a few minutes.

Make the filling

  2. Rub together the butter and flour.

  3. Add the butter-flour mixture to the boiling mixture along with the chopped oysters.

  4. Stir until it boils and thickens.

  5. Add the beaten egg yolks and stir over the heat for 1 minute.

  6. Remove from heat and mix in the parsley, salt, cayenne pepper, and nutmeg.

  7. Allow to cool.

  8. Once cooled, form the mixture into cylinders.

Coat and fry

  1. Roll each cylinder in beaten egg, then in bread crumbs.

  2. Fry the croquettes in boiling oil until golden brown.

What each ingredient does

Oysters
Provide the main flavour and the chopped body of the croquette filling.
Flour
Thickens the cream and oyster liquor mixture when cooked with butter.
Butter
Enriches the filling and combines with flour to form a thickening base.
Cream
Adds moisture and richness, giving the filling a smooth, soft texture.
Eggs
Bind the filling and help the bread crumbs adhere as a coating.
Bread crumbs
Form a crisp, browned outer crust when fried.

The step that matters

Allow the mixture to cool before shaping. Cooling lets the flour-thickened filling firm up so the cylinders hold their shape. Shaping a warm, loose mixture makes them slump and break apart in the hot oil.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, cream, nutmeg, butter, flour, pepper, egg):

  1. Cinnamonfits about as well
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Capersfits about as well

Fit is the average pairing score against oyster, cream, nutmeg, butter, flour, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
