What each ingredient does

Stewed tomatoes
Provide the main body and tomato flavour of the sauce.
Butter
Adds richness and fat, carrying flavour through the sauce.
Flour
Thickens the sauce as it cooks with the butter and liquid.

The step that matters

Stir continually until it boils. Flour thickens liquid only when it is stirred into the hot fat and liquid; without constant stirring it can clump and leave lumps in the sauce.

Swap the mace

How well each one fits the dish's main ingredients (tomato, butter, flour, onion, parsley, pepper):

  1. Thymefits better
  2. Garlicfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against tomato, butter, flour, onion, parsley, pepper. Candidates are from the same food group and used in at least 100 recipes.
