Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the mixture and lowers its freezing point, keeping the ice softer and less icy.
Lemons
Juice adds acidity that brightens the flavor and balances the sweetness.
Raspberries
Provide the main fruit flavor and color.
Egg white
Beaten foam adds air, giving the ice a lighter, smoother texture.

The step that matters

Adding the beaten egg white just before freezing. Beaten egg white holds air in a foam. Adding it too early, or mixing it too hard, can deflate the foam, and the ice ends up denser and less smooth. Mix gently and freeze promptly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
