Ingredients

  • 1 pint of milk
  • 2 cups of granulated sugar
  • ⅓ cup of flour
  • 2 eggs
  • 2 tablespoons of gelatin
  • 1 quart of cream
  • 1 pound of French candied fruits (½ pound will do)
  • 4 tablespoons of wine

Bring the milk to a boil.

In a bowl, beat together the flour, 1 cup of sugar, and the eggs, then stir into the boiling milk.

Cook for 20 minutes, then add the gelatin that has soaked in water for 1 to 2 hours.

Strain the mixture and let it cool.

Once cool, add the remaining sugar and whipped cream until stiff.

Chop the fruit finely and soak it in the wine.

Freeze the cream for 10 minutes, then add the wine and fruit, and finish freezing.

Remove the beater, pack the pudding smoothly, and set it aside for several hours.

To serve, dip the tin in warm water, turn out the cream, and serve with whipped cream heaped around.
