What each ingredient does

Strawberries
Provide the fruit that is preserved and gives the dish its flavor and texture.
Sugar
Draws moisture out of the fruit and helps preserve it while sweetening it.

The step that matters

Do not stir; press down with a spoon.. Stirring breaks up the strawberries and can make the preserve cloudy and mushy. Pressing them under the syrup keeps the fruit whole and submerged while it sets.
