Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Mutton Baked Roll

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Bone the mutton and trim excess fat. Use bones to make stock for Scotch broth.

  2. Lay the meat on a board, cover with bacon, and add a layer of veal forcemeat.

  3. Add pieces of pickled walnuts, roll tightly, and tie with string.

  4. Cover with greased paper and place in a baking tin.

Bake and serve

  1. Bake in a moderate oven (350°F/175°C), basting occasionally.

  2. Serve with gravy made by boiling together currant jelly, parsley, bread crumbs, pepper, and coarse sea salt.

What each ingredient does

Breast of mutton
Forms the main body of the roll and becomes tender and juicy as it cooks.
Bacon
Lays fat over the meat, adding savoury flavour and moisture during baking.
Veal forcemeat
Fills the roll with a moist, herbed layer that flavours the meat as it bakes.
Pickled walnuts
Add a sharp, tangy note that contrasts with the rich meat and forcemeat.

The step that matters

Rolling and tying tightly. A tight roll keeps the filling in place and gives even slices. Loose rolling lets the forcemeat escape and cook unevenly during baking.
