Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream together the butter and sugar until light and fluffy.

  2. Add the yolk of the egg and mix well.

  3. Stir in the lukewarm milk.

  4. Gradually add the sifted flour, baking powder, and salt, mixing until smooth.

  5. Whisk the egg white until stiff peaks form and gently fold it into the batter.

Bake

  1. Divide the batter into three layers and bake in a preheated oven at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, and helps give the cake a tender crumb.
Sugar
Sweetens the cake and helps it brown while creaming aerates the batter.
Egg
Yolk adds richness and structure; whipped white adds lift and airiness to the batter.
All-purpose flour
Provides the main structure that sets the cake as it bakes.
Baking powder
Releases gas during baking so the layers rise and stay light.

The step that matters

Folding in the egg white. Stiffly whipped whites trap air that gives the cake its lift. Folding gently keeps that air in; vigorous stirring deflates the batter and produces a denser layer.
