Buckwheat Cakes

Ingredients

Directions

Make the batter

  1. In a bowl, combine warm water, yeast, salt, and molasses.

  2. Add buckwheat flour until you achieve a thin batter.

Rise and keep

  1. Cover and let the batter rise in a warm place overnight.

  2. To maintain the batter, save a little to use as a starter instead of yeast for the next day.

  3. If the batter is sour, add 1 teaspoon of baking soda, stir, and fry immediately.

What each ingredient does

Yeast
Ferments the batter, producing gas that makes the pancakes rise and become light.
Buckwheat flour
Forms the body of the batter, giving the pancakes their structure and earthy flavour.
Molasses
Feeds the yeast and adds sweetness and depth of flavour to the batter.

The step that matters

Letting the batter rise overnight. Yeast needs warmth and time to ferment the batter. Too little time or a cold spot leaves the pancakes dense and flat, while a long rise develops the sour notes the recipe addresses with baking soda.

Swap the buckwheat

How well each one fits the dish's main ingredients (molasses, flour):

  1. Jalapenofits better
  2. Cinnamonfits about as well
  3. Buckwheatthe original
  4. Allspicefits less well

Fit is the average pairing score against molasses, flour. Candidates are from the same food group and used in at least 100 recipes.
