Cake Making

Ingredients

Directions

  1. Secure your hair and clean your hands and nails.

  2. Prepare your workspace by cleaning the table and gathering all necessary tools.

  3. If it's warm, place eggs in cold water for a few minutes.

  4. Grease the pans with fresh lard and line the bottom with several layers of paper.

  5. Sift flour and sugar together, and measure them accurately.

  6. If using very salty butter, wash it to freshen it; warm it slightly if hard, but do not melt it.

  7. Beat the yolks of the eggs thoroughly and strain them; set the whites aside in a cool place.

  8. Beat the egg whites until they hold their shape when the bowl is turned upside down.

  9. Mix the baking powder or soda and cream of tartar into the measured flour.

  10. To ripen new flour, place it in the sun or near a fire for a few hours.

  11. Use sour milk for a spongy cake or sweet milk for a pound cake.
