Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the sugar and butter until light and fluffy.

  2. Add the sweet milk and mix well.

  3. In a separate bowl, combine the beaten egg yolks with the sugar mixture.

  4. Stir in the cream of tartar and baking soda.

  5. Fold in the beaten egg whites gently.

  6. Add the sliced almonds and mix until evenly distributed.

Bake

  1. Pour the batter into a greased cake pan and bake for about 30-40 minutes or until a toothpick comes out clean.

What each ingredient does

Eggs
Whites trapped by folding add lift and structure, while yolks add richness and set the crumb.
Butter
Creamed with sugar, it traps air and adds fat for a tender texture.
Sugar
Creamed with butter, it helps create a light texture and adds sweetness and browning.
Almonds
Sliced almonds add nutty flavour and a firm, crunchy texture to the crumb.
Baking soda
Reacts with the acidic cream of tartar to release gas, helping the cake rise.
Cream of tartar
Acidic ingredient that reacts with baking soda to leaven the batter and stabilise the eggs.

The step that matters

Folding in the beaten egg whites gently. Egg whites hold air bubbles that give the cake its lift. Stirring vigorously knocks that air out, so the cake may bake flat and dense.

Swap the almond
