Boiled Pheasant

Ingredients

Directions

  1. Scald and skin the pheasant, then cut it up like a common chicken, removing all shot.

  2. Place the pieces in hot water and boil until a fork can easily insert into the meat.

  3. Remove the pheasant and broil it over a good fire.

  4. Arrange the broiled pheasant on a platter and keep it warm in the stove.

  5. Prepare toasted bread, butter it, and cut it into 2-inch squares; place on the platter with the pheasant.

  6. In the kettle with the boiling liquid, add a small lump of butter, season with salt and pepper, and thicken with flour.

  7. Boil the sauce rapidly for 2-3 minutes, stirring well, then pour it over the toast and pheasant.

  8. Serve immediately.
