Prairie Chickens

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove all shot from the prairie chickens and wash them in several waters with some baking soda.

  2. Rinse and dry the chickens, then fill them with dressing and sew them up with cotton thread.

  3. Tie down the legs and wings.

  4. Place the chickens in a steamer over hot water and steam until cooked through.

  5. Transfer to a dripping pan, cover with butter, and sprinkle with salt and pepper.

  6. Dredge with flour and place in a 400°F (200°C) oven, basting with melted butter until golden brown.

  7. Serve with apple sauce, cranberries, or currant jelly.
