  1. Slice the smoked beef.

  2. Pour boiling water over the beef to freshen it, then pour off the water.

  3. In a skillet, frizzle the beef in butter until browned.

  4. For the dressing, combine milk and flour in a saucepan, stirring well while cooking.

  5. Just before serving, stir in the egg yolk.

  6. Alternatively, slice cold boiled or baked beef, fry it brown, and dress it the same way.
