Ingredients

Directions

Prepare

  1. Cut the liver into thin slices and place on a platter.

  2. Pour boiling water over the liver and immediately pour it off to seal the outside and remove unpleasant flavor.

  3. Season the fine rolled crackers or bread crumbs with pepper and salt.

Fry

  1. Heat hot lard or beef drippings in a skillet.

  2. Dredge the liver slices in the seasoned crumbs and place in the skillet.

  3. Cover with a tin lid and fry slowly until both sides are dark brown and the liver is thoroughly cooked, about 15 minutes.

What each ingredient does

Liver
Is the main protein, cooked until firm and browned on the outside.
Crackers or dried bread crumbs
Form a seasoned crust that browns and crisps in the hot fat.
Hot lard or beef drippings
Conducts heat to fry the slices and adds rich flavor and browning.

The step that matters

Frying slowly under a lid. Liver is delicate and dries out or toughens if overcooked, so gentle heat under a cover cooks the centre through while the crumb coating browns without burning.
