Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. Sift baking powder into the flour.

  3. In a bowl, mix flour, butter, sugar, and salt.

  4. Add enough sweet milk or water to form a soft dough.

  5. Roll out the dough thinly and cut into layers.

Bake and assemble

  1. Place each layer in a baking pan and spread with a little butter and sprinkle with flour.

  2. Bake for about 15 minutes until golden.

  3. Turn the cake out upside down and remove the top layer.

  4. Layer the cake with sweetened strawberries, repeating until all layers are used.

  5. Serve warm with sugar and cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough and sets as the cake bakes.
Baking powder
Releases gas during baking so the layers rise and turn light.
Butter
Adds fat for tenderness and flavour in the dough and layers.
Strawberries
Provide sweetness and juiciness that soak into the layers.
Cream
Adds richness and a cool, smooth contrast to the warm cake.

The step that matters

Rolling and cutting the dough thinly. Thin layers bake through evenly and crisp at the edges, while thick dough stays doughy in the centre. Adding too much liquid makes the dough tough, so stop once it just holds together.
