Transparent Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix the eggs, sugar, butter, and wine until well combined.

  3. Spread the mixture onto the pie crust.

Bake and finish

  1. Bake in the preheated oven until set, about 30-40 minutes.

  2. While baking, beat the egg whites until stiff peaks form.

  3. Remove the pudding from the oven and spread the beaten egg whites on top.

  4. Return to the oven and bake until the top is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the filling into a custard and add structure as they cook.
Sugar
Sweetens the filling and helps the top brown.
Butter
Adds richness and fat to the filling for a tender texture.
Wine
Adds flavour and liquid to the filling.
Rich pie crust
Holds the filling in a shell while it bakes.

The step that matters

Beating the egg whites to stiff peaks. Stiff peaks trap air in the whites, which expands in the oven and gives a light, airy topping. Under-beaten whites stay runny and sink, while over-beaten whites turn dry and grainy.
