Ingredients

  • fresh tomatoes
  • butter
  • coarse sea salt
  • black pepper
  • toast

Directions

Scald the tomatoes by pouring boiling water over them, then peel and slice, removing any defective parts.

In a hot skillet, melt a lump of butter and add the sliced tomatoes.

Season with coarse sea salt and black pepper.

Cook over high heat, stirring frequently or chopping with a knife, wiping the knife often to prevent blackening the tomatoes.

Serve immediately in a deep dish lined with toast.
