Ingredients

Directions

Make the dough

  1. In a bowl, combine sweet milk, butter, lard, and potato yeast.

  2. Add enough flour to form a dough and let it rise overnight.

  3. In the morning, knead the dough thoroughly and let it rise again.

Shape and bake

  1. Shape the dough into balls the size of a small hen's egg.

  2. Roll each ball into long rolls about 4 inches long and ¾ inch in diameter.

  3. Place the rolls in even rows in greased pans, brushing lightly with egg white.

  4. Let them rise for 20-30 minutes before baking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet milk
Provides moisture and liquid that hydrates the flour to form the dough.
Butter
Adds fat that tenderises the crumb and contributes richness and flavour.
Lard
Adds fat that shortens gluten strands, giving a softer, more tender texture.
Potato yeast
Ferments the dough so it rises and develops a light, airy texture.
Flour
Forms the gluten network that gives the dough its structure and chew.
Egg
Brushed on the rolls, it promotes browning and a glossy surface.

The step that matters

Overnight rise and thorough kneading. Yeast needs time to ferment the dough fully, and kneading develops gluten so the dough holds gas. Under-kneading or a short rise leaves rolls dense and flat.

Swap the potato

How well each one fits the dish's main ingredients (milk, butter, flour, egg):

  1. Chivefits about as well
  2. Potatothe original
  3. Leekfits about as well
  4. Asparagusfits about as well

Fit is the average pairing score against milk, butter, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
