Making Tea

Ingredients

Directions

Prepare the pot

  1. Boil water and pour it into a thoroughly cleaned and heated teapot.

  2. Add the required amount of tea: 1 teaspoon per person or ½ cup for 5 persons.

  3. Cover the teapot to prevent steam from escaping.

Infuse and serve

  1. Let the tea infuse in a hot place for 7 minutes without boiling.

  2. Pour the tea into cups immediately after infusion.

  3. For a stronger brew, add more boiling water after the initial infusion.

What each ingredient does

Tea
Provides the flavour and colour of the brew as it steeps in the water.
Boiling water
Extracts flavour from the tea leaves and carries it into the cup.

The step that matters

Let the tea infuse without boiling. Water near boiling extracts flavour from the leaves efficiently, while holding the infusion in a hot place without boiling keeps the brew from turning bitter and astringent. Covering the pot traps heat and aroma so the tea steeps evenly.
