What each ingredient does

Granulated sugar
Adds sweetness and body to the punch and balances the acidity of the lemon.
Claret
Forms the wine base, supplying the main flavour and body of the punch.
Jamaica rum
Adds strength and a deep, rich aroma to the finished punch.
Lemon rind
Releases fragrant oils into the hot water, adding citrus aroma and brightness.

The step that matters

Add the rum and claret just before serving. Alcohol and wine aromas are volatile and fade with prolonged heating or standing, so adding them last keeps the punch fresh and lively.
