Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the eggs together until very light.

  2. Add the milk, cornmeal, boiled rice, melted butter, and salt. Mix thoroughly.

  3. Stir in the baking powder.

Bake and serve

  1. Grease three round shallow pans and pour in the mixture.

  2. Bake in a hot oven at 400°F (200°C) for 30 minutes.

  3. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs add structure and lift to the batter, holding the bread together as it sets.
White cornmeal
Provides the main body of the bread, setting into a firm, crumbly crumb when baked.
Boiled rice
Adds moisture and a soft, tender texture to the crumb.
Melted butter
Adds fat for richness and a softer, more tender crumb.
Baking powder
Releases gas in the batter, causing the bread to rise in the oven.

The step that matters

Stir in the baking powder. Baking powder starts releasing gas once it contacts liquid, so it should be stirred in last and the batter baked promptly to keep the rise from fading.
