What each ingredient does

Barley
Starch swells during long boiling, giving the soup body and a thick, chewy texture.
Broth
Forms the savory liquid base and carries the flavor of the soup.
Egg yolks
Thicken and enrich the soup as their proteins set gently with heat.
Sweet milk
Adds richness and creaminess, softening the savory broth.

The step that matters

Stirring in the egg yolks and milk off the heat. Egg yolks scramble and curdle if they meet strong heat. Removing the pan from the heat first and stirring steadily lets the yolks blend in smoothly and thicken the soup gently.

Swap the nutmeg

How well each one fits the dish's main ingredients (barley, beef, egg, milk):

  1. Nutmegthe original
  2. Cinnamonfits about as well
