What each ingredient does

Tomatoes
Provide the main body, acidity and flavor of the sauce.
Baking soda
Neutralizes some of the tomato's acidity, softening its sharpness and keeping the milk from curdling.
Butter
Adds fat for richness and a smoother mouthfeel.
Rolled crackers
Thicken the sauce as their starch absorbs liquid and swells.
Milk
Adds creaminess, mild sweetness and body to the sauce.

The step that matters

Stir in the scalding hot milk off the heat. Milk added to acidic tomatoes can curdle if it is too cold or the mixture is too hot. Adding it off the heat and keeping it hot, not boiling, helps it blend smoothly into the sauce.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, butter, milk):

  1. Potatofits better
  2. Capsicumfits better
